Quick and Clean Thai Curry

Here's what you need:

2 tbsp turmeric, cumin and coriander

Chopped garlic – I use frozen because its quick and easy and I'm lazy 🙂

Chopped onion – as above

1 tsp of honey

1 red chilli

Small can (160ml approx) coconut milk /cream

Meat if your choice – chicken and leftover roast beef are my faves

Fish sauce

In a blender pop the coconut cream, spices, chilli, onion and garlic and whizz up into a paste. Meanwhile heat the meat of your choice. Add the blended ingredients and fish sauce. Stir well on a medium heat.

Reduce heat down and simmer for 20/30min and chuck in your veg of choice – I used mini corn, Mange tout and peppers

Serve!

Its so easy, pop in any extra ingredients if you think you need them. Its really adaptable recipe. All the family eat it and I add extra chilli at the end for me
