Banana protein pancakes

I'm in love with these at the moment! So easy and yum.


You'll need 1 banana

2 eggs

Greek yoghurt

Fruit of choice

Cinnamon if you wish

Mix the banana and eggs, I use a potato masher and a tiny bit of cinnamon. Mash into a smooth pulp.


Meanwhile heat up some oil (coconut is best ) in a frying pan. Add a third of the mixture and cook on both sides. This mixture should make 3.

I stack them and top with Greek yogurt, strawberries and a drizzle of honey. Not an ounce of guilt is felt 🙂



Clean frugal & lush tagine!

Another thing is I'll try to part more recipes, and share pictures.

The other day I made a huge tagine, I always use the left over meet from a roast dinner. It was pulled pork this week.


Meat of choice

Can of chickpeas

Can of kidney beans

Baked beans if you like

Carton of passata

Onion finely chopped (I use frozen)

Garlic (again, lazy and frozen!)

Cumin, Garam masala and turmeric – teaspoon of each

Peppers & mushroom are optional

Coriander to garnish

Method –

Fry the onion and garlic in a huge pan until soft, and add your meat. Bung the other ingredients in and turn the heat down. Simmer for 20-30m. Taste and decide if it needs more spices. I like paprika too. I serve with basmati rice that I pop some turmeric in as it makes the rice yellow and the kids like it! Naan bread if you wish.

This meal is cheap, easy and freezes well.
